SUMATRA DARK
Sumatra
is an unusual coffee. Sumatra arabicas
are usually unwashed, natural coffees.
It is one of the few coffees that
can be aged in the green form. Aging
it causes the standard Sumatra characteristics
to become more apparent and complex
resulting in a cup with tremendous
depth. Sumatra is naturally low
in acidity and famous for its extraordinary
richness, earthy flavor, herbal
aroma, and berry undertones.
We like to use Sumatra as a blending
coffee because it adds such an elegance
to our different blends. However,
it is also excellent on its own.
